Ingredients (4 Servings)

  • 4 tablespoons chia seeds
  • 2 cups plant-based milk or coconut milk
  • 4–6 dates, pitted
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract

Instructions

Step 1: Blend the Base

Add the plant-based milk (or coconut milk), dates, cinnamon, nutmeg, and vanilla extract to a blender. Blend until smooth and creamy.

Step 2: Combine With Chia Seeds

Place the chia seeds in a bowl. Pour the blended mixture over the chia seeds and stir well until everything is evenly combined.

Step 3: Let It Set

Pour the mixture into small glasses or bowls and place them in the refrigerator. Let the chia pudding set for at least 3–4 hours, or preferably overnight. As it chills, the chia seeds will absorb the liquid and create a creamy, pudding-like texture.
